INGREDIENTS
1 small eating apple
2 fresh apricots (or 6 dried apricots or use canned apricots)
1 cup of water

METHOD
1. Peel apple, remove the cores and chop the flesh into pieces.

2. Peel the fresh apricots, remove stones and chop the flesh into pieces (if using dried apricots, cut into fine dice).

3. Put the water into a small saucepan, add the apricots and apple.

4. Bring to the boil, reduce heat and simmer for 8 to 10 minutes or until fruit is soft and tender.

5. Blend using a stick blender until smooth.

6. Cool slightly, drain the liquid from the pan, and set it aside in a small container.

6. Blend using a stick blender until nice and smooth, adding cooking liquid to get the right consistency.
