INGREDIENTS
4 tablespoons of couscous
1 apple, peeled and chopped into small pieces
2 tablespoons of natural yogurt
A pinch of ground nutmeg, if desired
½ a cup of water

METHOD
1. Using a small pot, add in water and chopped apple then bring to the boil.

2. Reduce heat and simmer until cooked through. Blend using a stick blender.

3. Boil some water in your kettle (jug) or in a small saucepan on the stove top.

4. Put the couscous into a small bowl.

5. Add just 5 tablespoons of the freshly boiled water to the couscous and cover the bowl with clear plastic wrap.

6. Wait 5 minutes for the couscous to steam cook and absorb the water.

7. Remove plastic wrap and add the yogurt and apple purée to the couscous.

8. Stir the couscous, yogurt and apple purée well with a fork until fully mixed.

9. If you like, add a pinch of ground nutmeg and stir again thoroughly.
