6 – 8 months
1 small chicken thigh (skinless)
1 cup of peeled, finely chopped sweet potato
1 cup of water
2 fresh apricots or 6 dried apricots
1. Heat the water in a small/medium saucepan over high heat until just simmering, then add the chicken, reduce heat to medium/low, and continue to simmer for 1 minute to poach the chicken a little.
2. Add the sweet potato and the apricots, bring to the boil over high heat, then reduce heat to low and cook gently for about 15-20 minutes – or until apricots and potatoes are soft and just a little water is left.
3. Cool the mixture a little then use a stick blender to make a smooth puree.
