INGREDIENTS
1 tablespoon of vegetable oil
1 small onion
1 small boneless chicken breast, skinned
2 medium sweet potatoes
1 pinch of ground cinnamon
1 pinch of ground cardamom
1 pinch of ground cumin
1 pinch of ground coriander
1 pinch of ground turmeric
½ cup red lentils
2-3 cups of water

METHOD
1. Wash the lentils in a sieve, under running water – picking out any grit.

2. Cut the chicken breast into small cubes.

3. Use a separate board to peel and finely chop the onion and sweet potatoes.

4. Heat the oil in a medium-sized saucepan over medium heat, add the onion and stir/fry until the onion is soft and lightly coloured.

5. Sprinkle in the cinnamon and stir/fry for a moment or two, then add the chicken and continue to stir/fry until the chicken is light brown all over.

6. Add the rest of the spices and the sweet potato dice, and stir everything well to combine and distribute the spices.

7. Pour in the water and add the lentils, raise the heat to bring to the boil, then lower heat again to medium/low and simmer gently for about 30 minutes, or until the lentils are soft.

8. Check occasionally and add extra water to prevent drying out, until lentils are ready.

9. Blend using a stick blender until you have the right consistency.

HANDY HINTS
Serve this tasty dish up on some cooked rice and add on top some natural yogurt for more flavour and texture!
