Beans Pureed with Potato and Peas

INGREDIENTS

½ cup of fresh green beans
½ cup of fresh peas, shelled (or frozen peas)
1 small potato
2 cups of water

METHOD
1. Wash the beans, cut off each end, then cut beans into 2 centimetre (1 inch) pieces.

2. Peel the potato and chop it into chunks.

3. Put the water into a medium-sized saucepan and bring to the boil over high heat.

4. Add the peas, beans and potato chunks, turn heat to medium/low and simmer the vegetables for about 10 minutes, or until the potatoes are soft.

5. Drain the vegetables and use a stick blender or food processor to make a smooth pure – or mash well with a fork for more texture.
