INGREDIENTS
1 skinless chicken breast
1 teaspoon of olive oil
1/2 cup of peas, fresh or frozen
1/2 cup of broad beans, shelled
1/2 cup of corn kernals
2 cups of water

METHOD
1. Cut up chicken into small pieces.

2. Put a small pot on the stove, add the water, broad beans, peas and simmer for 5 minutes or until tender.

3. In a separate pan fry chicken using a little olive oil and cook on a high heat and until the juices run clear in the pan.

4. Strain the broad beans and peas from the pot and combine with the cooked chicken.

5. Squeeze broad beans and remove skins.

6. Using a stick blender, puree ingredients until smooth.
