Broccoli, Carrot, Leek, Parsnip Oatmeal

INGREDIENTS
1 leek
1 carrot
1 parsnip
1 cup of broccoli
1/2 a cup of regular oatmeal (porridge oats)
3 cups of water

METHOD
1. Remove the leek outer skin, rinse under water and slice into small thin disks/circles.

2. Peel and chop carrot into small pieces.

3. Peel and chop parsnip into small pieces.

4. Chop broccoli into small pieces.

5. Using a medium sized pot add water, chopped leeks, carrot, broccoli, parsnip and oatmeal.

6. Bring to boil then reduce heat to simmer for 12 – 15 minutes until vegetables are nice and tender.

7. Using a stick blender puree until nice and smooth.
