INGREDIENTS
1/2 a swede (rutabaga)
1 parsnip
1 carrot
2 cups of vegetable stock (or broth or water)

METHOD
1. Peel and chop swede into small pieces.

2. Peel parsnip and remove the top and tail. Chop parsnip into small pieces.

3. Peel carrot and remove the top and tail. Chop carrot into small pieces.

4. Using a small pot add in carrot, parsnip, swede and vegetable stock/water.

5. Bring to the boil and simmer for 20 minutes or until vegetables are soft and tender.

6. Using a stick blender, blend until nice and smooth.
