Cheesy Bell Pepper Rice

INGREDIENTS
1 cup of cooked rice
3/4 cup of salt free vegetable stock
1/2 a cup of grated cheese
1 whole finely chopped red bell pepper/capsicum
1 tablespoon of chopped fresh parsley

METHOD
1. Preheat your oven to 180 deg C.

2. Using a small baking dish, lightly grease the inside of the baking dish with olive oil.

3. In a small bowl mix together the rice, cheese, bell pepper/capsicum and parsley.

4. Add mixed ingredients to the baking dish.

5. Pour stock over the top of the mixture in the baking dish.

6. Bake in the oven for 20 – 25 minutes until the cheese is golden brown in colour.

7. Put into a small bowl and puree with a stick blender.
