INGREDIENTS
1/2 cup chickpeas
1/3 cup cannelini beans
1 onion
2 tablespoons chopped parsley
1 teaspoon mild curry powder
1/4 cup grated parmesan
1 egg

METHOD
1. Peel and dice the onion finely

2. Using a small pan cook off the onion until golden brown. Then add in the curry powder and cook for another minute.

3. Put cooked onion into a medium sized bowl along with the chickpeas and beans.

4. Mash chickpeas and beans with a fork until they are broken down. Then add in the egg, parmesan cheese and chopped parsley. Mix together thoroughly.

5. Heat up a medium sized pan and add in a little vegetable oil.

6. Using a teaspoon, spoon in the mixture onto the hot pan and cook until golden brown on both sides.

7. Allow to cool and serve when ready.

Makes 20 fritters

Fritters will keep in the refridgerator for 2 – 3 days.
