INGREDIENTS
2 tablespoons of cooked pearled barley
2 tablespoons of apple puree (bought or homemade)
½ a small, ripe banana, peeled and mashed
2 teaspoons of natural yogurt

METHOD
1. Put 1/2 cup of pearl barley and 1 cup of water (or use half water, half apple juice) into a small/medium saucepan and bring to the boil.

2. Reduce heat to low, cover and simmer for about 40 minutes until barley is soft and the liquid has been absorbed.

3. In a small bowl, combine 2 tablespoons of cooked barley with the apple puree, banana and yogurt and mix well.

4. Use a stick blender if a smoother texture is required, then chill in the refrigerator before serving.
