INGREDIENTS
1 cup of lean minced (ground) pork
2 cups of water
1/2 cup of rice, uncooked
1 peach, peeled, sliced off the stone and chopped (or use canned peaches)
¼ cup of chopped fresh pineapple

METHOD
1. Bring 1 cup of water to a boil in a small saucepan over high heat and add the pork.

2. Reduce the heat and simmer for 2 minutes.

3. Add the uncooked rice, the remaining 1 cup of water, and the chopped peach and pineapple to the pork.

4. Bring to a boil again, reduce the heat and simmer for 15 minutes.

5. Remove cooking liquid from the refrigerator, spoon off the grease that will have risen to the top, and add the liquid to the pork mixture.

6. Simmer for another 5 minutes then puree using a stick blender, or mash well with a fork for the desired texture.
