INGREDIENTS
¼ cup of cooked quinoa
1 apple, peeled, cored and diced
1 ripe pear, peeled, cored and diced
1 drop of vanilla extract
½ cup of natural yogurt

METHOD
1. Pour a ½ cup of water into a small saucepan (with a lid) and bring to the boil over medium heat, then stir in ¼ cup of quinoa and bring back to the boil.

2. Reduce the heat to low, put the lid on the pan, and simmer gently for 10-15 minutes, until the water has been absorbed and the quinoa is soft – checking that it does not boil dry.

3. Put the apple and pear dice into a small saucepan with enough water to just cover and bring to a simmer over medium heat, then cover the pan and reduce heat to low and poach gently until soft.

4. Stir in the vanilla and simmer for a few more minutes, then turn off the heat, cool a little and use a stick blender to puree the fruit.

5. Mix the fruit puree with the yogurt, then stir in ¼ cup of the cooked quinoa and serve.
