Meatballs with Quinoa

INGREDIENTS
250 grams (8 ounces) of lean minced (ground) beef
½ cup of cooked quinoa
½ cup of finely grated carrot
1 egg yolk, beaten
2 tablespoons of apple puree
1 pinch of dried thyme

METHOD
1. Pour 1 cup of water into a small saucepan (with a lid) and bring to the boil over medium heat, then stir in a ½ cup of quinoa and bring back to the boil.

2. Reduce the heat to low, put the lid on the pan, and simmer gently for 10-15 minutes, until the water has been absorbed and the quinoa is soft – checking that it does not boil dry.

3. Preheat the oven to 200C (400F).

4. Place all ingredients into a medium bowl and use clean hands to mix everything together well.

5. Squeeze and roll small amounts into 2½ – 3 centimetre (1 inch) balls. Should make 25 balls.

6. Place the meatballs onto baking trays and bake for about 15 minutes, until the meatballs are golden brown and cooked through (open one to check there is no pink colour.)

7. Cool and serve as finger food.
