INGREDIENTS
350 grams of frozen peas
4 spring onions
1 tablespoon of extra virgin olive oil
1 1/3 cups low salt or homemade chicken or vegetable stock
1/2 teaspoon of dried tarragon
1 teaspoon of natural yogurt

METHOD
1. Chop spring onions into small pieces.

2. In a small pot add in olive oil and spring onions.

3. Heat up pot so the spring onions start to sizzle until golden brown.

4. Add to the pot frozen peas, stock and tarragon.

5. Bring to the boil then reduce heat and simmer for 10 minutes.

6. Allow to cool then blitz using a stick blender until nice and smooth.

7. When serving add a teaspoon of natural yogurt.
