INGREDIENTS
1 small apple, peeled and cut into small pieces
1 medium beetroot, peeled and cut into small pieces
1/2 cup of cooked quinoa

METHOD
1. Pour a ½ cup of water into a small saucepan (with a lid) and bring to the boil over medium heat, then stir in ¼ cup of quinoa and bring back to the boil.

2. Reduce the heat to low, put the lid on the pan, and simmer gently for 10-15 minutes, until the water has been absorbed and the quinoa is soft – checking that it does not boil dry.

3. Bring plenty of water to the boil in the base of a steamer, put the apple and beetroot in the top and steam for about 10 minutes, then add in the apple and steam for a further 5 minutes.

4. Put the apple and beetroot into a small/medium bowl and puree using a stick blender.

5. Stir and mash in ½ cup of the cooked quinoa.
