Red Lentil and Sweet Potato Dhal

INGREDIENTS
1 small sweet potato, peeled and chopped
½ cup of red lentils
2 teaspoons of olive oil
1 small onion, peeled and chopped
1 teaspoon of peeled, finely grated fresh ginger
1 clove of garlic, peeled and crushed
½ teaspoon of ground coriander
½ teaspoon of ground turmeric
½ teaspoon of ground cinnamon
2 cups of water

METHOD
1. Rinse the lentils in a sieve under running water and pick out any grit.

2. Heat the oil in a medium-sized saucepan over medium/low heat, add the onion and stir/fry for 2-3 minutes until light brown.

3. Add the garlic and the ginger and stir/fry for 1 minute, then add the coriander, turmeric and cinnamon, and continue to stir/fry gently for 2-3 minutes, without allowing anything to burn.

4. Pour in 1¼ cups of the water, stir well to combine, then add the sweet potato and the lentils.

5. Raise the heat to bring to the boil, lower the heat again and simmer for 20-30 minutes, until the lentils are cooked – adding more of the water as needed so that it is not too dry.

6. Remove from the heat and mash everything well, or puree with a stick blender if preferred.
