INGREDIENTS
200g red lentils
400ml water or salt free vegetable stock
1/2 onion finely diced
1 tablespoon butter
1 teaspoon of cumin

METHOD
1. Rinse lentils thoroughly in a strainer under the tap with cold water.

2. Over a medium heat, melt butter in a small pot, then add onion & cumin and cook until onion is soft but not coloured.

3. Add water/stock and lentils to pan.

4. Simmer gently for 15 – 20 minutes until lentils are soft.
