INGREDIENTS
½ cup of red lentils
2 cups of water
½ cup of rice
½ teaspoon of butter

METHOD
1. Put the lentils into a fine sieve and wash well under running water, picking out any grit.

2. Add the rice to the lentils and water in the pan and bring to the boil over medium heat.

3. Reduce the heat to low, put on a lid, and cook gently until the rice and lentils are very soft – about 20 to 25 minutes – checking often and adding more water if necessary to avoid drying out.

4. Turn off the heat and put into a bowl, then stir in the butter and mash well or use a stick blender to get the desired consistency.
