INGREDIENTS
1 cup of broccoli
1/2 red capsicum
2 carrots
1 cup of coconut milk
1 tablespoon soy sauce
1 tablespoon peanut butter

METHOD
1. Peel and dice carrots into small pieces

2. Dice up red capsicum and broccoli into small pieces

3. Heat up a medium sized pan and saute off the carrots and red capsicum for 3 minutes

4. Then add in the coconut milk, peanut butter and soy sauce. Simmer for 5 minutes.

5. Then add in the chopped broccoli and simmer again for another 5 minutes.

6. Wait until it cools before serving.
