INGREDIENTS
2 tablespoons of vegetable oil
1 small onion, peeled and chopped small
2 medium carrots, peeled and chopped small
1 small red capsicum (bell pepper), deseeded and chopped small
4 tablespoons of lentils
500 millilitres (16 fl. ounces) of boiling water or salt-free vegetable stock
100 grams (3½ ounces) of Cheddar cheese, grated

METHOD
1. Rinse the lentils in a sieve under running water and pick out any grit.

2. Heat the oil in a small/medium saucepan (with a lid) over medium heat and add the onion, carrot and capsicum (pepper).

3. Stir/fry for 3-4 minutes then add the lentils and the boiling water or stock.

4. Put the lid on and turn heat to low/medium to simmer the mixture for 25-30 minutes, or until the lentils are very soft and the mixture is still quite moist – check frequently and add more water or stock if necessary.

5. Remove from the heat and stir in the cheese, then puree to a smooth consistency using a stick blender.
