Tofu Macaroni Cheese

INGREDIENTS
½ cup of dry macaroni pasta
¾ cup of silken tofu
2 teaspoons of unsalted butter
1 tablespoon of flour
½ cup of milk
1 cup of grated Cheddar cheese
1 pinch of white pepper
1 pinch of paprika powder

METHOD
1. Half fill a small/medium saucepan with water and bring to the boil over high heat then add the pasta and bring back to the boil.

2. Reduce heat to medium/low to cook briskly for 8-10 minutes, or until pasta is soft (cooking times vary with different brands.) Drain the pasta and place in a large bowl.

3. Drain the tofu in a fine sieve placed over a small bowl, and press with the back of a wooden spoon to remove as much moisture as possible.

4. Pour away the liquid, crumble the tofu into the bowl and mix in 1 tablespoon of the milk.

5. Melt the butter in a small/medium saucepan over medium heat, tip in the flour and cook for 1 minute, stirring well to blend to a ‘roux’ paste.

6. Move the pan away from the heat and add the milk a little at a time, stirring constantly to avoid lumps.

7. Turn the heat to low and return the pan to cook for 3-4 minutes, stirring constantly until the sauce thickens.

8. Add the tofu, cheese and seasonings and continue to cook until the sauce is smooth, then pour it over the macaroni, mixing and chopping well with a fork or metal spoon.

HANDY HINTS
Add in some steamed vegetables for a more complete meal!
