Tofu Tomato Sauce with Pasta

INGREDIENTS
1 tablespoon of olive oil
1 clove of garlic, peeled and finely chopped
1 small onion, peeled and diced
½ a green bell pepper (capsicum), de-seeded and diced
1 cup of tofu
1 cup of canned chopped tomatoes
2 tablespoons of tomato paste
1 large pinch of dried basil
1 large pinch of dried marjoram
1 pinch of freshly ground black pepper
1 tablespoon of chopped fresh parsley
Pasta of your choice (fettuccini or tagliatelli, for instance)

METHOD
1. Three-quarters fill a medium-sized saucepan with water, bring to the boil over high heat, put in the pasta and bring back to the boil.

2. Reduce heat to medium and cook briskly for about 12-15 minutes, or until pasta is soft. (Cooking times vary according to the brand of pasta). Strain through a sieve and put into a medium/large bowl.

3. While the pasta is cooking, heat the oil in a medium-sized saucepan and stir/fry the onion and garlic over medium heat until soft, then add the green pepper and stir/fry for 2-3 minutes more.

4. Crumble the tofu into the pan and cook for about 5 minutes, stirring occasionally, and stir in the tomatoes, the puree, the dried herbs and the black pepper.

5. Bring to the boil over high heat then reduce heat to medium/high and cook briskly for 5 minutes.

6. Add the sauce to the pasta, chopping to the desired texture, and sprinkle with the fresh parsley.
