INGREDIENTS
8 stone-free dried prunes
Boiling water
1 eating apple, peeled, cored and cut into chunks
1/3 cup of natural yogurt

METHOD
1. Place the prunes in a microwave-safe dish, cover with boiling water, then cover with a vented lid and microwave for 2 minutes, or until the water has been absorbed.

2. Remove the lid and cover again with boiling water, replace the lid and microwave for another 2 minutes.

3. Repeat this process if necessary, adding water until the prunes are nice and plump – DO NOT LET THEM DRY OUT.

4. Put the apple into a small saucepan and just cover with cold water then bring to the boil over medium heat.

5. Reduce heat to low, and simmer gently for about 10 minutes – or until the apple is soft – then add the prunes. Puree with a stick blender until nice and smooth.

6. Add the yogurt and stir well.
