INGREDIENTS
300 millilitres (10 fl. ounces) of water
¾ of a cup of brown rice
¾ cup of diced zucchini (courgette)
½ cup of diced celery
¼ cup of natural yogurt
½ cup of milk
1 small pinch of dried tarragon
¾ cup of canned tuna (canned in water) – drained
1 cup of grated Cheddar cheese

METHOD
1. Pre-heat the oven to 180C (350F).

2. Bring the water to the boil in a medium-sized saucepan and stir in the rice.

3. Cover with a tight-fitting lid, reduce the heat and simmer for about 35 minutes, or until rice is soft and the water is absorbed.

4. Remove from the heat and add the celery, yogurt, milk, tarragon, and zucchini.

5. Mash the tuna and add to the mixture, then combine everything well and transfer to an oven-proof dish, put on a cover, and bake for 30 minutes.

6. Remove from the oven and top with the grated cheese, then cool really well before serving – mashing to the desired consistency.
