INGREDIENTS
1 slice of wholemeal bread
200 grams of boneless, skinless salmon, finely chopped
1 spring onion, finely chopped (minced if you can)
Juice of 1/2 a medium lemon
1 egg
Pinch of salt

METHOD
1. Put the wholemeal bread into a food processor and blend until you have fine crumbs.

2. Combine the chopped salmon, spring onion, lemon juice, egg, salt and bread crumbs until well mixed through.

3. Make up little bite sized balls and set aside onto a separate plate. Refridgerate for 5 – 10 minutes to allow the mixture to cook and set.

4. Heat up a medium sized frying pan to a medium to a medium to high heat.

5. Add in a little oil and add in the salmon fritters. Use a spatula and press down each salmon fritter so they are flattened.

6. Cook each fritter for 2 – 3 minutes each side until golden brown.

7. Allow to cool and they are ready to serve.
